Faced with a glorious pan of bacon grease, I always inquire: what shall I use it for? Last week the experiment was plantains (which turned out wonderful). The week before that it was fried potatoes. Tonight: white button mushrooms! They'll serve as an appetizer while my turkey finishes up its eight hour brine for a late night feast.
Andy's mom has this really RICH recipe she uses bacon and then uses the grease to fry onions and then uses mushrooms and cheese (obviously you'd have to omit) and then she cuts up hard boiled eggs in it with some type of sauce on top of english muffins. haha. i made it once without the bacon fat. matt (andy's bro) told me it wouldn't be the same. hahahaha!
